When to Plant Hops

One of the basic ingredients in beer is also very easy to grow. Hops will thrive in most moderate climates. Learning how to plant and care for Hops is easy and rewarding with your own homebrew hops garden.

The hop plant is a hardy perennial plant. It will grow vines annually from the rootstock. These vines will grow up to 25 feet each season and die back after the harvest. The rhizome is part of the rootstock but posses the buds for propagation. Under good conditions, each hop vine will produce 1/2 to 2 pounds of dried flowers.

You may be asking, “can I plant hops where I live?”

The answer is yes…. probably. Hops are hardy in U.S. Department of Agriculture plant hardiness zones 3 through 8. Most of the US in in one of these zones. Here is a USDA Map of the United States that shows exactly where the hardiness zones are. The temperatures are the average minimum temperatures for each area:

Even parts of Alaska and Hawaii are suitable for growing your favorite hops.

What Time of the Year to Plant Hops

Planting months can very from coast to coast. California can probably plant earlier that Maine, but early May for most of the country would be as late as you would want to plant.

Hop Rhizomes are typically cut in March or early April. As with all crops, this depends on the weather. If the farmer’s field is too wet, they have to wait for the water to drain. The problem can get worse if the field is still covered in snow. The farmer needs to wait for the snow to melt and then the fields to drain. It is also possible that not all varieties are going to be harvested at the same time. If some of the fields have better weather than others, they will cut rhizomes at different times.

Adventures in Homebrewing ships their Hop Rhizomes as soon as they arrive from our farmers, which is typically early April. As long as your planting area is out of frost danger, we recommend planting in the ground as soon as you receive them. If your mounds are ready and mulched properly, rhizomes can survive days as cold as 20°.

If you have to store the rhizomes for a bit after you receive them, store them in the refrigerator until you are ready to plant.

Although most varieties will thrive if you are in a temperate region, there are a few variables you should consider when deciding on a variety of hops. If you are planting your hops simply for their aesthetic value, then you are really free to choose any variety you please. If you are in an area that sees a shorter growing period, you may want to plant a vine that will develop more quickly, allowing you to enjoy your plants for the longest possible period. As the country slowly begins to reopen, our summer is off to a sluggish start. But that doesn’t mean your favorite summer drink has to be put on hold.

So, let’s crack open a cold pickled beer.

What is Pickle Beer?

We admit, pickle beer sounds… weird. 

But it is a surprising new trend that is loved by many. This sour beverage has the taste and aroma of pickles. 

Here are some popular pickle beers, and recipes to make your own!

Sweet and Sour

We all know pickles can taste sweet or sour depending on the fermentation of the cucumber. This also applies when crafting your pickle beer. The most popular version of pickle beers are the ones that are sweet, but pack a sour punch. 

Here are our personal favorites:

El Gran Pepinillo

  • ABV: 5.8%
  • Mexican-style beer made with Best Maid pickles and Mexican chili peppers. This beer has a spicy kick, but is light and refreshing.

Best Maid Spicy Pickle Beer

  • ABV: 4.7%
  • This beer has spice at first sip! This is best for those who really like a kick. 

Urban Artifact Pickle 

  • ABV: 4.3%
  • German-style goose beer using cucumber, fresh dill, sea salt, and coriander. Try this beer with a burger or rueben to enhance the flavor. 

New PKL FKR Pickle Berliner  

  • ABV: 3.2%
  • This brew uses refermented Berliner weiss ale with bacteria and wild yeast. Pickle juice is added to the blend after fermentation.

Making Pickle Beer

There are many different ways you can make your pickle beer ranging from quick and easy, to long and challenging.

Just Add Pickle Juice

The easiest way to make pickle beer is adding pickle juice to your favorite beer.

If you’re brewing your own batch at home, simply add the pickle juice to your mixture. This is the most common way home brewers make their pickle beer. 

*Pro tip* – Add spices such as coriander, chili pepper, etc to give your beer some extra flare.

It’s important to note that many breweries craft their nut beer differently, so you can’t go wrong as you experiment. There are a variety of nut types, textures, and flavors to use, so grab whatever you have at home!

Rusty Rail Brewing | Fool’s Gold

Fool’s Gold is Rusty Rail’s best-selling beer in Pennsylvania. It’s an imperial peanut butter hefeweizen combining banana esters and peanut butter to make a distinct, popular nutty brew.

Mast Landing Brewery | Gunner’s Daughter

Gunner’s Daughter is a best-seller for a reason. With peanut butter and milk stout flavors, this brew pays homage to a beloved Halloween candy – Reeses’ Peanut Butter Cups.  This beer was supposed to be a one-time special release, but it quickly became a year-round staple. 

If you have Reeses’ at home, consider adding them to your recipe.

Lakewood Brewing | Peanut Butter Temptress

Peanut Butter Temptress was a popular brew that constantly sold out because it was delicious, but difficult to make. They used a combination of dry peanuts and milk stout to capture the rare taste.

DIY Nutty Brew

Since you can’t go to the brewery, we’re bringing the brewery to you. Let’s look at how a couple different breweries make their batches so you can see how to replicate it at home. 

Remember, making the perfect nutty brew takes time, so be patient.

Tin Whiskers Brewing Company

Tin Whiskers uses PB2 powdered peanut butter by pressing the nuts to remove most of the oil. It’s important to get the oil out so the head retention does not reduce. 

Once the peanuts are powdered, this brewery adds the mixture into the brew after fermentation when the temperature of the brew is cooled. 

Key Ingredients: Nut Goodie Porter and Salted Nut Roll Ale candy from Pearson’s Candy Company. 

If you don’t have this candy at home, no problem. Although it’s a little messy, you can use organic peanut butter as a substitute, and add it after fermentation. (Just make sure it’s not too hot!)

O.H.S.O Eatery & Nano-Brewery

This brewery does a three step process when making their nut-flavored beer. You can choose to do all three or just one! 

The team uses powdered, whole, and extract peanuts for their three layer nutty beer. The first step they take is adding honey, lactose, and sea salt to the boil, and then finish by adding PB2. 

Similar to dry hopping, the next step is to add dry honey roasted whole peanuts after fermentation, and then let this mixture sit for no more than five days. After this, they add a little bit of peanut extract to enhance the aroma of the beer. 

If you don’t have peanut extract or PB2, regular peanut butter and nuts will work fine for this recipe. Just add the peanut butter to the boil, and the nuts after fermentation. You can also substitute the peanut extract with vanilla extract and see how that goes! (Either way, it will be fine without it). 

There are many different combinations of nuts and methods you can try in order to achieve the brew you want, just keep trying different flavors from your pantry!

What are Hops? A Guide to Adding Hops to your Beer

Today, we’re talking about hops, and it’s not the kind Rapper’s Delight told us about.

Hops are a popular ingredient used to give the beer a certain smell and taste. You might have heard people refer to a beer as “hoppy” before, but what does that really mean?

The Hop Plant
A hop is a flower used for bittering, flavoring, and adding aromas to your beer.

Each hop has elements that can intensify smell, sweeten, or strengthen the bitterness of beer. There are different types of essential oils that control the aroma and flavoring of a hop, and different levels of alpha acids that control the bitterness.

You can use a variety of hops to achieve the smell and flavor of your choice!

Hoppy Strains

There are 3 main types of hops: Noble, American, and English. And each type offers a variety of options for your brew.

Noble Hops

Noble hops are found in Germany and the Czech Republic. They have a high amount of essential oils that intensify flavors and aromas, and a low alpha acid level that reduces bittering. Here are some of the classic Noble hops:

Saaz
­          Acid level: 3-5%
­          Style: Traditional Noble hop
­          Flavor Profile: Earthy, spicy, herbal

Lubelski
­          Acid level: 3-5%
­          Style: Substitution to Saaz
­          Flavor Profile: Floral, magnolia, lavender

Tettnanger
­          Acid level: 3-6%
­          Style: Traditional Noble hop
­          Flavor Profile: Spicy, floral

American Hops

American hops are grown right here in the U.S. They’re known for having high levels of myrcene that create stronger aromas. Here are some of our favorites:

Brewer’s Gold
­          Acid level: 6-10%
­          Style: Bittering hop
­          Flavor Profile: Spicy, blackberry currant

Cascade
­          Acid level: 4.5-7%
­          Style: Strong bittering and intense aroma
­          Flavor Profile: Citrus, grapefruit

Amarillo
­          Acid level: 8-11%
­          Style: Substitution to Cascade
­          Flavor Profile: Orange citrus

English Hops

English hops are found in (drumroll please) England. They have a low level of myrcene oil which makes their aroma milder. Here are three of the most popular English hops:

­          Flavor Profile: Fruity, floral, earthy

Sussex
­          Acid level: 4.3-5.8%
­          Style: Tropical

­          Flavor Profile: Sage, floral, spice, citrus

Now that you know the types of hops, let’s talk about how to use them.

Hoppy Brewing

There are a variety of ways to achieve your perfect hoppy brew. So whether you’re a first timer or a seasoned brewer, there are multiple methods to get you hoppin’ along.

Dry Hopping

Dry hopping is best used with hops with strong flavors or aromas that are added after fermentation.

This method can take up to 10 days, but we promise it’s worth the wait. We recommend using a Sussex hop for this method.

First Wort Hopping

First Wort Hopping relies on hops with low acid-levels to achieve a balanced taste and smell. It produces a smooth bitterness that compliments the smell of the beer. Brewers should toss 30-50% of the hops into the kettle before boiling the wort.

Though not as common, we suggest trying this method using Tettnanger hops.

Randall

Hoppy brews can also be achieved using a Randall device. This device filters the beer through the hops, allowing the strong flavors to seep into the beer – similar to a water filter! Randall devices are a no-stress, no-mess way to brew the perfect hoppy beer.

*CAUTION*

This method brews large quantities. So throw a party to share the amazing beer you just made!

Cascade is a great hop to use in your first batch.

Brewing An Uinta Dubhe Imperial Black IPA Clone Beer Recipe

Uinta Dubhe Imperial Black IPA CloneI was drinking one of my favorite beers last night and felt compelled to share a clone beer recipe for it. It was the Dubhe Imperial Black IPA from Uinta Brewing Co. of Salt Lake City, Utah. Uinta is one of may favorite American breweries and they make some fantastic beers. If you haven’t tried any of them yet, I highly encourage you to take a tour of their beer selection.
Their Uinta Dubhe Imperial Black IPA is a BIG beer: pitch black, 9.2% ABV, 109 IBUs. As dark as it is, it’s surprisingly not very heavy on the roasted flavors. Hops are a major factor, with huge spicy and citrus characteristics throwing themselves across the palate. There’s some light toasty and nutty character, which could come from the use of toasted hemp seeds. At 9.2% alcohol by volume, this beer is definitely a sipper.
Scouring the internet for tips and advice, I came across the Jamil Show on the Brewing Network. Jamil Zainasheff is something of a rockstar in the homebrewing world. He’s the author of two books about brewing, he writes the style guide section of Brew Your Own magazine, and has brewed dozens (maybe even hundreds) of award-winning homebrew beer recipes.
In one episode of the show, they interview a brewer from Uinta Brewing Co. to get the details on Dubhe. Here are some key points from the episode for brewing an all-grain version:

  • Shop GypsumUinta Dubhe uses a single step infusion mash at 152˚F. (To make enough beer for their 120-barrel batch, they have to mash twice and boil three times – a 22-hour brew day!)
  • The brewer recommends using calcium sulfate (a.k.a. gypsum) for water hardness (can help accentuate the hop character).
  • The brewer goes into a lot of detail about grain and hop ratios. I’ve scaled them down for a 5.5-gallon batch in the clone beer recipe below.
  • The brewer recommends using yeast nutrient since this is such a high gravity beer (normally added in the last 15 minutes of the boil).
  • Ferment at 68˚F.
  • Dry hop with Falconer’s Flight hops for about three weeks.
  • Uinta Dubhe uses a proprietary yeast strain, but the brewer recommends California ale yeast or German ale yeast.

Though the brewer admitted that a craft beer this big is “not a very efficient use of raw ingredients,” I highly recommend giving it a shot – especially if you love hops!Shop Yeast Energizer
Here are some additional tips for brewing this Uinta Dubhe Imperial Black IPA clone:

  • The clone beer recipe below assumes a 75% mash efficiency. It can be difficult to get a good efficiency with such a high gravity beer, so you may want to increase the grain bill by 10% or so to make sure you hit your numbers.
  • Assume a fair amount of volume will be lost in the trub, both at the end of the boil and after fermentation.
  • Also, boil-off volume should be adjusted to accommodate the longer, two-hour boil.
  • Hemp seeds can be found at a specialty grocery or health food store. I’d suggest toasting them in a dry skillet for several minutes to increase the toasty flavor and reduce the likelihood of them getting too soggy and clogging the mash.

This is a great beer for drinking year-round, but it’s also a strong beer, so it should age well. Don’t feel like you need to drink it all at once!

Directions: Mash crushed grains at 152˚F for 60 minutes. Add toasted hemp seeds during last 15 minutes of mash. Sparge to collect a total of roughly 9 Shop Steam Freak Kitsgallons of wort in the brew kettle. Boil for 120 minutes. Add hops according to schedule above. Whirlpool for one hour. Chill wort to 65-70˚F and oxygenate. Ferment at 68˚F. Add dry hops to secondary fermenter and allow for 3 weeks in secondary. Cold crash prior to kegging or bottling to help dry hops settle out.

The Power Of Taking Home Brewing Notes

Home Brewing PressFor beginning homebrewers and casual hobbyists, taking home brewing notes may not be much of a priority. The most important thing, after all, is that it should be fun, right? But most brewers will reach a point when they want to enhance their craft and take their homemade beer to the next level. Taking good home brewing notes is one of the best and easy ways to accomplish this.
Keeping a home brewing log of some sort has several advantages, just a few of which are listed below. Among other things, taking notes while brewing allows you to:

  • Record your beer recipes
  • Modify recipes for future batches
  • Recreate beers that came out well
  • Improve beers that didn’t
  • Track procedures, recording methods that work and those that don’t
  • Record tasting notes to help remember some of your favorite brews and identify potential problems

Taking home brewing notes allows you to look back on a brew that came out well and recreate it. On the other hand, when something goes wrong, having a beer brewing log of some sort can provide insight as to what might have gone wrong. Either way, taking good notes will help you make better beer in the long run.

Tips for Taking Good Home Brewing Notes

  • Take notes while you brew, or immediately afterwards. I know that if I wait until the next day to take notes, I’ll without a doubt forget some details. (Was that 1 teaspoon or 1 tablespoon of gypsum I added to the mash?) The sooner you log these details the better.
  • Keep a notebook for writing down home brewing notes, then transfer to a spreadsheet or home brewing template with all your other beer recipes and notes. Having consistency in the way you log your home brew will make it easier and more routine for you with each passing brew.Shop Beer Recipe Kits

What to Record in Your Home Brewing Notes
Beginning brewers might want to start by recording the following basics:

  • Record the recipe and ingredients, including the weight and type of all the ingredients, the time of each hop addition, and the strain of beer yeast used.
  • Include dates for brew day, transfer to secondary (if applicable), and bottling/kegging date.
  • Record both original gravity and final gravity so you can calculate alcohol content.
  • Amount and type of priming sugar used for bottling.
  • Tasting notes – Record the date of the tasting and common characteristics: aroma, appearance, flavor, mouthfeel, and overall impression. (Tip: Save a bottle or two of your brew for a tasting at a later date. You might be surprised how beers can change over time!)

Partial mash and intermediate brewers may want to log a few more details in their notebook:

  • Specialty grains used, if applicable
  • Water to grain ratio if doing a partial mash
  • Temperature of mini-mash, if applicable
  • Water amendments, if applicable
  • Fermentation notes, including duration of fermentation and changes in the fermentation temperature
  • If kegging and force carbonating your beer, record the amount of CO2 used or amount of pressure, the temperature of the beer in the keg, and the length of time under pressure

Shop Homebrew BooksFinally, all-grain brewers should keep the most detailed home brewing notes of all. In addition to the items above, they may want to record the following:

  • Gravity of first wort runnings
  • Extract efficiency
  • Pre-boil gravity
  • Post-boil gravity
  • IBUs
  • Size and type of yeast starter

6 of the Strangest Beer Recipes You’ve Ever Seen

Glowing BeerEvery homebrewer likes to experiment. That’s part of what draws us to the hobby. But sometimes that experimentation can get a little out of hand. Just how far is too far?
Personally, I feel that every batch of homebrew is an opportunity to learn something new about making beer at home. Whether the beer turns out great or you have to dump the batch, there’s always something to be learned about ingredients, techniques, and yes, maybe even yourself. So in that respect, it’s impossible to go to far or make a beer that’s too weird.
But if you want to brew a strange beer that’s actually drinkable, try a recipe that’s been tested before. Here are six strange beer recipes to get you started:

  • Sweet Potato Buckwheat Ale – This is a gluten-free beer recipe I devised for my girlfriend. More than anything else, she misses hoppy beers, so the sweet potato and buckwheat in this recipe offer a gluten-free backdrop for some Willamette hops. I highly recommend roasting the sweet potatoes before mashing. This recipe also lets you take a shot at malting some buckwheat. If you’re not gluten-free, you might consider swapping the molasses for some light DME.
  • Gruit (Partial Mash & All Grain) – Gruit is an ancient style of ale flavored with herbs and spices instead of hops (though hops can be used as well). Based on the number of herbs out there, there are an endless number of possible variations of gruit. This blog post features three gruit recipes for you to choose from.
  • Pomegranate Wheat Dopplebock (Extract)This strange — but intriguing — beer recipe that combines at least three different beer styles: fruit beer, wheat beer, German bock. It’s a relatively simple recipe, using 9 lbs. of wheat DME along with a small variety of specialty grains and 1.5 lbs. turbinado sugar. The trick here is extracting the juice from the pomegranate. You’ll find it easiest to just add pomegranate juice to the secondary fermenter.
  • Wild Root Brown Ale (All-Grain) – The bulk of this brown ale recipe is normal enough: pale malt, roasted malts, and chocolate malts, Cascade hops, Galena hops, Nugget hops, American ale yeast. What’s really strange about this beer recipe is the pound of wild rice, mashed separately, then mixed with the other grains, and the use of roasted dandelion root, which contributes a roasty, nutty, slightly licorice flavor to the beer. Sounds pretty good!
  • Smoked Pumpkin Seed Saison (Partial Mash & All-Grain) – This beer recipe requires the brewer to smoke some pumpkin and pumpkin seeds. These ingredients are simply mashed along with the grains in the mash. For additional complexity, the recipe adds cloves, cinnamon, and nutmeg, all towards the end of the boil. Keep this in mind for after you carve that Halloween pumpkin!

For a beverage consisting of so few ingredients, beer makes a huge statement.  Its rich diversity of flavors, aromas and textures make it the ideal partner for almost any meal.  As a homebrewing citizen, one of the greatest challenges you might face is finding the right grub to compliment your brew.  With so many possibilities, it can be a challenge to know where to begin.
The best place to start is with the profile of your beer since this will govern its interactivity with food.  This is determined by three main ingredients: malt, hops, and yeast.  Malt is sweet and often adds hints of chocolate or coffee to malt-heavy beers such as stouts and porters.  Hops are considerably more dynamic and will add bitter, spicy, floral and/or fruity flavors to beers, most pronouncedly in India Pale Ales.  Then there are the more yeasty beers, such as American wheat beers and German hefeweizens, which are generally lighter with heavy yeasty flavors.  Together, these ingredients bring out the sweet, bitter, spicy and rich features in the product of your beer brewing experience.
